The farm obtained its organic certification in 1992. The making of organic products was a challenge initiated by Omero, and now his daughter Giusy is taking things forward. The keyword is craftsmanship. Favoring the cultivation of native varieties the family is responsible for every stage of production: from harvesting by hand grapes and olives, to leading tastings in the cantina or around the world.
Sagrantino grapes traditionally planted around Montefalco have the highest levels of polyphenols and tannins of any grape. A wine of great longevity, with seriously dense tannins, Sagrantino was used in holy mass, hence its name (sacer is Latin for sacred). It exemplifies the winemaking heritage of Umbria, harking back to the Romans but also traditionally used as a sacramental wine. Giusy explains difficulties to make it in organic method: “Sagrantino vine have extremely vigorous leaf growth, so we have to remove leaves by hands to achieve perfect ripening, it is a late variety and on Mid October grapes are still on the vine – so a great deal of work is required to keep bunches free from disease during autumn mists.

The Sagrantino grapes have skins rich in polyphenolic substances and with an extremely complex aromatic heritage. The distillation carried out a subtle aroma typical of the vine of origin therefore makes the Grappa di Sagrantino very refined. It is pleasant with a characteristic aftertaste that recalls dried fruit and chocolate.
